This may not be an authentic Caesar Salad since it doesn't use Romaine, but the
leaf lettuce tastes better. My parents spent a year working on this recipe.
Dad's Caesar Salad
1. Tear and wash 2-3 heads red and/or green leaf lettuce, then spin or drain
off excess water.
2. Mix in large salad bowl:
1 egg
1 tsp olive oil
2 pinches dried dill weed
1 clove garlic, crushed or minced
4 dashes Worcestershire sauce
1 Tbsp red wine vinegar
2 Tbsp lemon juice
Freshly ground pepper to taste
3. Add grated parmesan and/or romano cheese, mixing with fork, until dressing
is thick enough to cling together. Adjust flavors and consistency using
oil, lemon juice and grated cheese as needed.
4. Toss dressing with greens, adding sliced mushrooms, croutons, chives and
other extras as desired. Serve immediately. (If you want to prepare ahead
of time, mix up dressing and store in fridge. Toss with lettuce just
before serving.)
